Pumpkin Spice Pancakes By @wwfoodblog 1/4 cup flour (I use whole wheat) 1 tbsp coconut sugar 1/2 tsp pumpkin spice 1/4 tsp cinnamon 1/2 tsp baking powder Pinch of salt 2 tbsp canned pumpkin purée (I use #traderjoes organic) 1 egg white 1/4 cup unsweetened almond milk 1/4 tsp vanilla Topping: 1/3 oz raw walnuts 1 tbsp pure maple syrup Heat a medium nonstick skillet over medium-low heat. In a medium bowl, combine flour, coconut sugar, pumpkin spice, cinnamon, baking powder and salt. Combine well. Add pumpkin purée, egg white, vanilla and almond milk and mix well until batter is smooth. Cook pancakes on skillet with a little cooking spray, flipping when bubbles form all over pancake (about 3-5 mins) and never pressing down. Cook 3-5 mins on other side or until cooked through. Serve with walnuts and maple syrup. Makes about 4 six inch pancakes.
