Oh my, one of my favorite Carnival foods made into Pancakes? Omg 🍡🍡🍡🍡🍡 thanks goes to @goody_girl for creating this masterpiece and sharing with us!  COTTON CANDY PROTEIN PANCAKES  INGREDIENTS:  3 tbsp coconut flour 1/3 cup and 2 tbsp egg whites 1 tbsp Greek yogurt  1/4 tsp baking powder  Agave Nectar or your favorite sweetener (to taste)  1/8 tsp coconut extract & vanilla extract 1 1/2 tsp Duncan Hines Frosting Creations in Cotton Candy Flavor (optional)  1/4 cup unsweetened vanilla coconut milk or almond milk  DIRECTIONS:  Mix all ingredients above together and then separate into 2 bowls. For one, add 1 scoop Strawberry Whey. For the other, add Vanilla Whey and blue food coloring. Cook on a low heat until bubbles appear, then flip.  PROTEIN SAUCE:  Greek Yogurt mixed with Vanilla Protein Powder and Blended Frozen Strawberries. Layer in between pancakes. Pumpkin Spice Pancakes  By @wwfoodblog  1/4 cup flour (I use whole wheat) 1 tbsp coconut sugar 1/2 tsp pumpkin spice  1/4 tsp cinnamon  1/2 tsp baking powder Pinch of salt  2 tbsp canned pumpkin purée (I use #traderjoes organic)  1 egg white 1/4 cup unsweetened almond milk  1/4 tsp vanilla  Topping:  1/3 oz raw walnuts  1 tbsp pure maple syrup  Heat a medium nonstick skillet over medium-low heat. In a medium bowl, combine flour, coconut sugar, pumpkin spice, cinnamon, baking powder and salt. Combine well. Add pumpkin purée, egg white, vanilla and almond milk and mix well until batter is smooth. Cook pancakes on skillet with a little cooking spray, flipping when bubbles form all over pancake (about 3-5 mins) and never pressing down. Cook 3-5 mins on other side or until cooked through. Serve with walnuts and maple syrup. Makes about 4 six inch pancakes.

Panko Parmesan Crusted Cod with Bruschetta by @erinspalmtrees  Ingredients: Four 4oz cod fillets 1/2 cup Ian’s whole wheat panko bread crumbs 1/4 cup shredded Parmesan cheese 1 egg, lightly beaten Splash of milk 1/2 tsp garlic powder 1 tsp parsley 1 1/2 cups cherry tomatoes, halved 1/4 cup fresh basil, chopped 2 cloves garlic, minced 1/2 tbsp balsamic vinegar 2 tsp olive oil Salt and pepper to taste  Directions: Combine cherry tomatoes, basil, garlic, balsamic vinegar and olive oil.  Refrigerate for at least 30 minutes. Pre-heat oven to 400 degrees.  Line a baking sheet with a silicone baking mat. Place egg in a shallow bowl or plate and add a splash of milk.  In another shallow bowl or plate, combine panko bread crumbs, Parmesan cheese, garlic powder and parsley. Dredge cod fillets in egg, then the panko mix until well coated.  Place on baking sheet. Bake at 400 degrees for 12-14 minutes or until cooked through and fish flakes easily.  Then broil for a few minutes to brown the bread crumbs, watching carefully so it doesn’t burn.
